Food Chemistry Lab Internship Report - A report that documents the internship activities of the applicant at a university nutritional center which serves to provide community education and nutrition research. The report was presented and explained by the applicant at a meeting of university staff and to the board of trustees of the center. |

Head Start Program Needs Assessment* - A report that documents the needs assessment of a local Head Start program in order to improve its nutritional services and to help the program to continue providing high quality services. It also provides the program with a strategic plan to help focus on solving the nutritional needs of the population and to promote the health and well being of the participants. |

Identification of an Environmental Unknown - A paper that demonstrates the applicant′s knowledge, skills and understanding in respect to microbiology and problem solving. |

Malnutrition in the Elderly Research Project - A paper that demonstrates the applicant′s interest in gerontological nutrition issues and displays the applicant′s research and writing skills. |

Psychology of Food - A paper that documents a survey and research project that involved the psychological reaction of respondents to certain food choices. The report includes forms developed by the applicant along with the data compilation created. |

| Projects - The following portfolio items are included to exhibit applicant's experiences and activities related to the nutrition, dietetic and food science fields, including the extensiveness of interests and involvement in community, academic and social environments. |

10 Steps to Safer Food Brochure (English / Spanish) / Right Steps Poster - The brochure and poster were created by the applicant and provided to the local Head Start program to assist in their community nutrition education program. |

Certificates and Letters - A compilation of various certificates and letters received by the applicant. |

Flavor of Mexico* - An in-depth study of the dietary and cultural habits of an individual. The study includes the nutrient analysis of the diet (by Food Processor software) and a design of a meal plan to improve the dietary value of the food consumed by the individual. A cost analysis of the meal plan is also included. |

Grant Proposal* - An exercise in writing a hypothetical grant proposal that involves a multi-week educational program to support Head Start efforts at improving nutrition understanding and practices, particularly in underprivileged neighborhoods. |

HACCP Plan* - An exercise in writing a Hazard Analysis Critical Control Points Plan for a fictitious food supply company that includes an analysis matrix and a matrix of critical control points. |

Local Community Nutrition Education Projects* - A compilation of the some of the nutrition education events in the local community in which the applicant participated as an educator/exhibitor - including a comprehensive table of local food banks and pantries compiled by the applicant. |

On Campus (CSUN) Nutrition Education Projects* - A compilation of the participation of the applicant at some of the on-campus nutrition education programs. |

Peer Nutrition Counseling Case Studies - Case studies of two individuals who were counseled by the applicant over a period of time as part of a peer nutrition counseling program. |

Product Development Project* - A project that required the applicant to work in a team environment to develop a new product with advanced nutritional benefits. The project required development, testing, surveying/taste testing and marketing efforts that resulted in a producing a final product. |

Raising Healthy Children in Difficult Economic Times Workshop / Event Nutrition Brochure - An exercise in developing and scheduling a hypothetical nutrition workshop that focuses on the health of children. Includes the development of advertising material/brochure that displays a logo and explains the event to prospective clients. |

Sample Lesson Plan - A lesson plan developed by the applicant to teach the Food Pyramid to elementary grade students - involving a number of teaching techniques and resources. The lesson plan was actually used by the applicant to teach to a 4th grade-level class at a local elementary school. |

Subway Facility Project* - A project which investigated the elements needed to conduct, manage, and operate a food service business, including factors relating to employees, menu choices, equipment variety and use, and other elements. |
